SQL tables are defined to PROIV using the File Maintenance (SLFILES) and External File Maintenance (SLEFILES) functions. There is no need to specify all the columns of a table in any file definition - the unreferenced columns are not fetched or updated.  If rows are inserted, the unreferenced columns must be null-permissive (must not be defined as NOT NULL) or must have default values if the Null Permissible field described below is not used.
